The weekly “little of this, little of that” feature here at Like Mother, Like Daughter!
We're coming to the end of this little sojourn with Rosie and the grandchildren. I'd wax emotional but the effort to move them out requires all my energy (I mean, Rosie is doing all the work but you know — mental energy isn't for nothing!) — I'll be driving down with her and helping her get settled back on base, so no time for sentiment! I'm trying to put together some links here and not think too much about all the things I'd like to post about but probably won't, not for a while yet.

It was by way of saying that yes, you can live on one income, because every household needs a manager (among other roles, some of which may be even more important) as well as an earner!
- Here's how I do my veggies for the freezer. Right now I have lots of cucumbers and I have to leave! Those won't freeze! Yikes, what should I do?!?

You can make gazpacho with your cucumbers and freeze it before adding oil and vinegar! My husband (who is from Spain) likes this recipe: http://www.delish.com/cooking/a1114/jose-andres-gazpacho-recipe/
It also works if you use 5-7 tomatoes.

You could make refrigerator pickles! They don’t last forever, but they are tastey and fast to make.

Freeze those cukes too! Chunk up and throw in bags….have you ever had a strawberry smoothie with cucummber added? Very refreshing. Im sure there are other combinations, but we’ve not gotten tired of this one!

I make Crisp Cucumber Freezer Pickles. Here’s the recipe: 7 cups sliced cucumbers, 1 sliced large sweet onion, 1/2 c sliced red, or green, pepper, 1 Tbs salt, 1/2 tsp celery seed, 1 c white vinegar, 2 cups sugar
Combine all ingredients. Stir and refrigerate for 3 days. Pack into freezer bags and freeze. Thaw before serving. They are very good and last a long time. And they really are still crisp after freezing.

I was expecting Gerard Manley Hopkins, but not Joyce Kilmer! I’m glad they used a poem other than Trees 😉 His wife was also a published poet, although her work took a turn when one of their daughters died. (He’s my great grandfather, or I wouldn’t know these things…)

Of course you can use any spices you want. I made the Nourishing Traditions recipe in June, and while they weren’t super crispy (wrong kind of cuc, no grape leaves), they were very delicious. A friend and I got together to make multiple fermented foods and then share- she said her family ate their pickles within the week!
P.S. to the Rosie above (Hill? formely H-K) I did not know your grandfather was a poet! I’ll have to ask your sister next time she comes through.

I love the Bible story of Mary and Martha. An aside: when someone mentions the name Martha, in any context, I think of one of my favorite movies – Mostly Martha. A German movie. As you, Leila, pointed out, it is about Mary and Martha. Martha the hard worker and Mario the lover of life.

Splendid table had a green gazpacho (bell pepper, jalapeño, spinach, cukes, lemon) recently, too, that was yummy and might also freeze well? (Do test for salt and olive oil at the end; I had to add more of both.)

I freeze cukes. I grate them, squeeze them, mix with chopped mint, press into a lump, and freeze. They go into tzatziki for our lentils and rice in winter.
